Aab Goosht

Aab Goosht is a scrumptiously hearty peasants meal. Like all wonderfully rustic meals, this brings a soulful warmth from the inside out.


1.5g lamb (I used shoulder of lamb)

2 onions (medium size)

2 garlic bulbs (washed with skin on) optional

1/2 tin chopped tomato

2 dry limes / limu omani or alternatively 1 tblsp lemon juice

1/2 tin chopped tomato

2tblsp tomato puree

1tsp tumeric

1/2 tsp black pepper (ground)

1 1/2 tsp salt

400g tinned (240g drained)

7 cups cold water


In a medium sized pot add the lamb, roughly chopped onions, tomato puree, chopped tomato, turmeric, salt and pepper, and the 2 garlic bulbs.

Add the limu omani or alternatively 1tblsp lemon juice and 7 cups cold water.

Place on high heat for 30 minutes until all the ingredients come to the boil.

Lower the heat to medium and allow to cook for a further 1 hour.

Add the peeled and halved potatoes to the pot with the tinned chickpeas and allow to cook for an additional 30 to 45 minutes or until the potatoes have cooked through and the meat is tender and easily falls off the bone.

Note: If your using dry chickpeas then you will need to soak 240g in water over night before adding to the pot as above.
