1 cup plain flour
1 tsp baking powder
1 medium sized egg
2 cups whole milk
1/3 cup white granulated sugar
1/3 cup oil
1/4 tsp ground saffron
1 tsp pistachios
1 ripe fig
3 tbsp honey
1/4 tsp crushed rose petals
In a large bowl, add the flour, baking powder, crushed dried rose petals, and saffron. Roughly mix together.
Gradually add the milk, stirring and ensure that there are no lumps in your batter.
Finally add the egg, oil and sugar to the batter and mix vigorously.
Place the frying pan on low heat and drizzle some oil in it. Allow to heat. Pour a ladle of the batter into the frying pan and allow the pancake to form small holes on top. This is an indication that that your pancake is ready to turn over.
Once ready, turn your pancake over and allow 2 minutes on this side, or until your see your pancake has a light brown tinge to it.
Remove from pan and repeat.
For the Honey and fig topping:
Place your frying pan in low heat and drizzle with a little oil.
Slice the fig length ways and spread evenly in the frying pan. Wait to hear a sizzle, turn the figs over and pour 1 tablespoon of honey over them. Slowly fry for 30 seconds.
Remove the fried figs in honey and decorate over the pancakes. Drizzle the rest of the honey and garnish with pistachio slivers and rose petals.
