Chilli Chocolate Sea Salt cake. I’ve been thinking about making this cake for ages and it tastes better than I thought it would. The depth of the dark chocolate comes through with hints of salty over sweet, but it’s that special tingle you get from the chilli dancing in your mouth that takes it to a totally new level of cake experience.
1 cup self-raising flour
1/3 cup vegetable oil
1/4 cup white caster sugar
1/4 tsp vanilla paste
100g dark chocolate with sea salt
2 pinches of red chilli powder
In a mixing bowl pour the vegetable oil, add the eggs, vanilla paste, chilli powder and sifted caster sugar. Whisk until the mixture becomes thick and pale yellow in colour.
Gently melt the dark sea salt chocolate over a bowl of boiling water.
Add the melted chocolate to the wet ingredients and fold in gently to incorporate it into the mixture.
Fold in the sifted flour to the wet ingredients.
Place the cake mixture into a well greased cake tin and bake for 30 minutes at 180 degrees.
Remove from the oven and dust with icing sugar and sprinkle with crushed dark chocolate over the hot cake.
Devine eaten warm. My minime had two slices! As for me. . . well who’s counting 😉
