This is a really easy chocolate mousse recipe with just two main ingredients.
3 egg whites
150g dark chocolate at 65%
Fresh raspberries (optional)
Whisk the egg whites together in a bowl until they form stiff peaks.
Break the chocolate up into small pieces and place in a plastic bowl.
Pour 1 cup of cold water in a pan and allow the water to come to the boil.
Once the water has boiled reduce the heat to low and place the plastic bowl in the hot water so that the heat building around the bowl melts the chocolate.
Continue stirring the chocolate until completely melted.
Remove from over the pan of hot water and gently pour over the egg whites ensuring that you are continuously folding the egg whites and the melted chocolate together. The folding allows the egg whites to keep the air bubbles built whilst whisking.
When both chocolate and egg whites have been combined, place in small cups or dessert bowls and place in the fridge for 2 hours.
Remove from the fridge after 2 hours and place a washed rasperry on top.
